Easy Breakfast Casserole

Easy Breakfast Casserole
Ingredients
- 1 pound pork sausage
- 12 eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 bell pepper, any color, diced (optional)
- 1 cup mushrooms, chopped (optional)
- 2 cups shredded cheddar cheese
Directions
- Preheat oven to 350 degrees. Spray a 9×13’’ pan with cooking spray.
- Combine the eggs, milk, cheese and salt and pepper in a large bowl. Mix on low speed with an electric mixer or with a whisk.
- Heat a skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture.
- Add the bell peppers and mushrooms to the same skillet the sausage was cooked in and sauté for 4-5 minutes. Add to the bowl with the eggs and stir everything to combine.
- Pour mixture into the 9×13’’ pan and bake for 35-45 minutes or until the edges are brown. Always check the center to see if cooked through.
- Store leftover casserole in the fridge and eat within 3 days.
