Baked Mac & Cheese with American Cheese

  • 16 oz box elbow macaroni
  • 1.25 lb yellow American cheese, freshly grated
  • 3 tbsp grated onion
  • 6 tbsp butter, I prefer stick butter for this
  • 2 tbsp flour
  • 2 1/2 cup milk
  • salt
  • pepper


  1. Preheat oven to 375 degrees.
  2. Boil water in a medium pot and add in macaroni. Cook for 10 minutes.
  3. While the macaroni is cooking, grate the cheese. (I usually ask the deli for a block of cheese that weighs around 1.25 lbs. I tell them it measures roughly 3.5 inches in length and they just cut it with a knife. My mom uses Land O Lakes brand, but get whatever brand you prefer).
  4. Combine macaroni, grated onion, and 1/3 of the cheese in a 9×13 baking dish.
  5. Put the remainder of the cheese on top.
  6. Melt 2 1/2 tbsp of butter in the pot. Remove from heat and stir in the flour and 1 cup of milk. Return to the burner and slowly mix in the remaining milk. When it starts to boil, remove from heat and pour over the macaroni and cheese.
  7. Sprinkle with salt and pepper.
  8. Cut the remaining butter into 9 pieces and place in different spots on top of the macaroni and cheese.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake another 15 minutes, until lightly browned.
  11. Enjoy!
