Mom’s Mac & Cheese

Baked Mac & Cheese with American Cheese
Ingredients
- 16 oz box elbow macaroni
- 1.25 lb yellow American cheese, freshly grated
- 3 tbsp grated onion
- 6 tbsp butter, I prefer stick butter for this
- 2 tbsp flour
- 2 1/2 cup milk
- salt
- pepper
Directions
- Preheat oven to 375 degrees.
- Boil water in a medium pot and add in macaroni. Cook for 10 minutes.
- While the macaroni is cooking, grate the cheese. (I usually ask the deli for a block of cheese that weighs around 1.25 lbs. I tell them it measures roughly 3.5 inches in length and they just cut it with a knife. My mom uses Land O Lakes brand, but get whatever brand you prefer).
- Combine macaroni, grated onion, and 1/3 of the cheese in a 9×13 baking dish.
- Put the remainder of the cheese on top.
- Melt 2 1/2 tbsp of butter in the pot. Remove from heat and stir in the flour and 1 cup of milk. Return to the burner and slowly mix in the remaining milk. When it starts to boil, remove from heat and pour over the macaroni and cheese.
- Sprinkle with salt and pepper.
- Cut the remaining butter into 9 pieces and place in different spots on top of the macaroni and cheese.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake another 15 minutes, until lightly browned.
