Sausage, Peppers, Onions and Potato Bake
Ingredients
- 16 baby potatoes (red or gold), quartered
- 1 red bell pepper, chopped
- 1/2 yellow onion, chopped
- 4 andouille chicken sausage links, sliced
- 1 tbsp olive oil
- Dash of salt and pepper
Directions
- Preheat oven to 400 degrees.
- Chop and slice all ingredients. Add everything but the sausage to a large bowl and coat with olive oil.
- Place potatoes, peppers and onions on a large sheet pan (I use a silicone baking mat).
- Sprinkle with salt and pepper.
- Bake in oven for 20 minutes. Take pan out and toss in the sausage.
- Bake for another 10 minutes.
- Divide up onto plates and enjoy.
