Ingredients

  • 4 bell peppers, sliced in half and seeds removed
  • 4 cups shredded pulled pork
  • 1 cup cherry tomatoes, sliced in half
  • 2 tablespoons diced red onion
  • pinch salt and pepper
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Remove the seeds and inside stems of the peppers. Place peppers in a 9×13 glass baking dish or two 8×8 dishes.
  3. Fill each pepper half with ½ cup pulled pork.
  4. Top with cherry tomatoes and diced onion.
  5. Add salt and pepper. Sprinkle on cheese.
  6. Bake the peppers for 25 minutes, or until the cheese is golden and peppers can be easily sliced.
  7. Add any of your favorite toppings or sauces.
