Pulled Pork Stuffed Peppers

Pulled Pork Stuffed Peppers
Ingredients
- 4 bell peppers, sliced in half and seeds removed
- 4 cups shredded pulled pork
- 1 cup cherry tomatoes, sliced in half
- 2 tablespoons diced red onion
- pinch salt and pepper
- 1 cup shredded mozzarella cheese
Directions
- Preheat oven to 350 degrees.
- Remove the seeds and inside stems of the peppers. Place peppers in a 9×13 glass baking dish or two 8×8 dishes.
- Fill each pepper half with ½ cup pulled pork.
- Top with cherry tomatoes and diced onion.
- Add salt and pepper. Sprinkle on cheese.
- Bake the peppers for 25 minutes, or until the cheese is golden and peppers can be easily sliced.
- Add any of your favorite toppings or sauces.
