Roasted Carrots with Feta – Simple Side Dish
I have never been a carrot lover. I would occasionally dip a carrot into some ranch dressing or hummus, but that’s about it. And cooked carrots- forget it! But all that changed when I tried roasted carrots with feta. My neighbor, Adrienne, brought this yummy side dish for a random dinner we had. She apologized for being lazy and not contributing much, but little did she know this recipe would change my life. Now I can say that carrots is one of my favorite side dishes.
Roasted carrots with feta is the perfect simple side dish. Quick and easy to make with a unique flavor combo. Give it a try and I promise you won’t regret it!

Start by washing and peeling your carrots. Then cut them into 3-4 inch slices about 3/4 inch thick.

Coat in olive oil and salt and pepper. Roast in oven for 25 minutes. Top with feta cheese crumbles.

Ingredients
- 1 lb carrots
- 2 tbsp olive oil
- salt
- pepper
- 1/2 cup crumbled feta cheese
Directions
- Preheat oven to 400 degrees.
- Peel carrots.
- Cut carrots into 3-4 inch slices about 3/4 inch thick. (This is an approximate measurement.)
- Coat carrots in olive oil. Sprinkle with salt and pepper.
- Spread carrots on a pan and roast in oven for 25 minutes.
- Top with feta cheese crumbles.
