Creamy Kale Gratin
Ingredients
- 1 large bunch of kale, leaves torn from stem and chopped
- 1/2 shallot, minced
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 oz gruyere cheese, freshly grated
- 4 oz sharp cheddar cheese, shredded
- 2 oz parmesan cheese, grated
- 2 cups heavy cream
- 1 tbsp dijon mustard
- 1/2 tsp nutmeg
- 1/2 cup panko breadcrumbs
- 1/4 cup plain breadcrumbs
Directions
- Preheat oven to 350 degrees.
- Spray a 9×13 baking dish with cooking spray.
- Combine kale and shallot in baking dish. It’s ok if piled high because it will cook down.
- Sprinkle with garlic powder, salt, and pepper.
- Toss cheeses together in a bowl. Combine all (but about a 1/4) with the kale mixture.
- In a medium bowl, whisk together the cream, mustard, and nutmeg. Pour cream mixture over top of kale.
- Cover with the remaining cheese.
- Sprinkle breadcrumbs on top.
- Bake for 40-45 minutes.
- Serve immediately!
