Creamy Kale Gratin

Ingredients

  • 1 large bunch of kale, leaves torn from stem and chopped
  • 1/2 shallot, minced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 oz gruyere cheese, freshly grated
  • 4 oz sharp cheddar cheese, shredded
  • 2 oz parmesan cheese, grated
  • 2 cups heavy cream
  • 1 tbsp dijon mustard
  • 1/2 tsp nutmeg
  • 1/2 cup panko breadcrumbs
  • 1/4 cup plain breadcrumbs

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 baking dish with cooking spray.
  3. Combine kale and shallot in baking dish. It’s ok if piled high because it will cook down.
  4. Sprinkle with garlic powder, salt, and pepper.
  5. Toss cheeses together in a bowl. Combine all (but about a 1/4) with the kale mixture.
  6. In a medium bowl, whisk together the cream, mustard, and nutmeg. Pour cream mixture over top of kale.
  7. Cover with the remaining cheese.
  8. Sprinkle breadcrumbs on top.
  9. Bake for 40-45 minutes.
  10. Serve immediately!
